Dandelion Honey
If you have a garden, spring is the right season to pick up dandelions.
Try this recipe to make a delicious and healthy honey.
For one medium jar you need:
- 1 cup and half of petals of dandelion flowers
- 3 cups of water
- 2 cups of raw cane sugar
- 1/2 cup honey
- 1 tablespoon of lemon juice
Wash the flowers, then, put them on a clean towel and pat dry.
Cut the base, keeping only the yellow petals.
Pour the 3 cups of water in a saucepan, add the petals. Bring to boil and cook for one minute.
Remove from the heat, cover and place on the counter overnight.
The next day, pour the liquid, through a sieve, into a bowl.
Squeeze the sieve to extract all the liquid from the petals.
Pour back from the bowl into pot, add lemon, honey and sugar.
Simmer, on low heat, from one hour to one hour and half.
Stir occasionally. Let cool the syrup for some minutes and check the consistency.
You can cook the syrup a little longer if you want a more thick syrup.
Place in a glass container, close with a lit and turn upside down until cold.
Store in your refrigerator.
